what happens to the remote turn on lead.. does this control the amps on/off switch too? or do all oem head units have a remote output anyway?

Actually very few …
Actually very few amps support high level input such as what your factory deck puts out. Granted some factory decks do have rca outs but again these systems are few and far between.
